PETARI shapes its donabe in Yokkaichi, in Mie Prefecture, the birthplace of banko ceramics. The clay absorbs heat and then slowly releases it: the vegetables caramelize gently, the rice cooks grain by grain, and the umami is revealed. And since the dish is shaped like a plate, it goes from the fire to the table without transferring.
